Entropy is a restaurant in the heart of Brussels. And like so much in Brussels, it is a 'special one': the team is constantly innovating the food culture by giving local ingredients worldly flavours.

Does that seem surreal? Well, at least it's good for a new culinary experience that packs a punch. Because every meal is an adventure in sustainability. The conscious choice of seasonal, locally sourced ingredients is the key to Entropy's zero-waste solution.

The kitchen team, led by chef Elliott Van de Velde and Adeline Barras, creates dishes that simultaneously tantalise your taste buds and protect the planet. From farm-to-table dinners to innovative plant-based options, at Entropy you are ready for a culinary journey. You will find the restaurant in a historic building with an urban garden. Ideal for boosting biodiversity in the city. That rewarded the Gault&Millau-guide with an award for sustainability.

Entropy's commitment to sustainability goes far beyond choosing an interior made of recycled materials and energy-efficient furnishings. The restaurant also organises workshops and events. In doing so, it creates awareness against food waste and for sustainable kitchen practices.

Especially for this, they started Hearth Project: volunteers bring surpluses from their storage facilities to people who can use help. To do so, they with local farmers, supermarkets and distribution centres. Thus transforms food that would otherwise be wasted into a valuable aid for communities in need.
