Who steers what at Flanders Circular?
Minnie Daels and Boris Theunissen discovered that you can make a delicious granola from beer grains, the nutritious by-product of beer brewing. They also use surplus fruit and chocolate as ingredients for her sustainable Draft Granolas, which they have been marketing since 2021.
Reusing surpluses
Granola is an immensely popular breakfast mix of toasted grains, seeds, kernels, and dried fruit, among other ingredients. In 2021, Minnie and Boris launched their own brand: Draft Granola. The name refers to beer brewing. In fact, they discovered that you can reuse the residual product from the brewing process to make delicious granola. Besides beer grain, they also incorporate ‘ugly’ fruit that supermarkets can no longer sell and surplus chocolate for corporate events into their granola.
Local products
Draft Granola comes in three different flavours: tropical fruit, honey and red fruit with chocolate. They will eventually replace the tropical fruit with apple with pecans because they prefer to work only with local produce. The honey comes from Bees-Api, a Brussels beekeeper who places hives on roofs, attracting Brussels bees.
And for the beer grain, Draft Granola works with several small Brussels breweries, including Brussels Beer Project and La Source.
